Smoking disaster

    I have recently taken up smoking! Not cigars or pipes, but meats. I admit it's a little hard to roll properly, newspaper seems to work best. OK, enough of the bad jokes.
    Today was my first attempt at using an actual smoker. I did all the right things. I got a free second-hand smoker, lots of advice from friends and on-line, and I spent enough money and time to make it painful, and in the end, had NO success. I'm not surprised, but a little frustrated. I used 2/3 of a bag of charcoal, almost half of my hardwood, a good 7 hours of smoking time, and ended up with something that was a little dry on the outside and a little VERY raw in the middle. Not good, especially for pork!
    I'm hoping I can salvage it by finishing it in the oven tomorrow. Fortunately we had enough left overs in the fridge that no one went hungry tonight.
    Anybody else have smoking disasters similar? How did you overcome them?

  1. I didn't realize that smoking meat was such work! Hang in there, 'cause it doesn't sound like it can get any harder! :)
